The two primary methods for cooking ribs are using either moist heat or dry heat. The reason is that the ribs have large amounts of cartilage and connective tissue and therefore it requires time and low heat to ensure they become tender and juicy.
The thin shape and number of bones can make it difficult to gauge whether or not the ribs are properly cooked; therefore, it’s recommended using a high-quality thermometer with a needle-thin probe to get an accurate temperature.
