Pork Carcass Fabrication: Primal and Retail Cuts


Did you know that pork fabrication entails dividing the carcass into two different cuts, known as primal and retail cuts?


What are the primal cuts of pork?


A side of pork can be broken down into four basic primal cuts, consisting of these four sections, before being divided further into sub primal cuts.


  1. Shoulder:The shoulder encompasses the front portion of the pig. You might hear the upper part of this primal cut called the butt and the front leg called the picnic. 


  1. Leg: This primal cut includes the pig’s hind leg and rump. This portion is where ham comes from, so you’ll sometimes hear the leg section referred to as the ham.


  1. Loin: The middle of the pig consists of two sections. The top, known as the loin, is exceptionally tender and lean.


  1. Belly:The bottom portion of the middle of the pig is the belly, sometimes called the side. It’s the fattiest portion of the pig.

The next step is to separate the meat into the various cuts you can purchase at the supermarket – these are called retail cuts.

Van Wyngaardt’s delivery policy

Our delivery policy requires a minimum order amount depending on the region. You may order from Monday to Thursday. Should you place an order before 12:00, we assure you of next-day delivery. If you order after 12:00, the order will be delivered to you the following working day. This is only valid for Gauteng stores. Outer Gauteng stores delivery period may vary. At Van Wyngaardt, we pride ourselves on always providing exceedingly good meats.
