Ever wondered how pork how your favourite ham is prepared from farm to store?

 

As mentioned in a previous article, pork is fabricated into two different pork meat cuts. Meat cutting, or fabrication, is the process of cutting, boning, and portioning large cuts of meat to primal and sub primal specifications.

 

Pork is delivered from the farms from where we source our products; these may be whole, in sides, or broken down into pieces (professionally known as ‘primals’.) The primals which include the pork shoulder, pork leg, pork loin, and pork belly are broken down into sub-primals. See the example below of the primal and sub-primal pork cuts that you can purchase in the supermarket.

The leg is tender and predominantly free of connective tissues, making it perfect for dry heat cookery. Most commonly, the pork leg is cured, smoked and processed to produce ham.

 

  1. Pork Loin

 

The pork loin is commonly split into three sections: the rib, sirloin, and loin centre. Purchase our tasty pre-marinated ribs here!

 

  1. Pork Shoulder

 

The pork shoulder is very popular for use in sausage making due to the higher fat content. We offer a variety including regular, footlong and breakfast sausages.

 

  1. Pork Belly

 

This is the section cured and smoked to make pork side bacon. Please see our assortment of bacon here.

Once this is sent to us, our expert sales representatives will process your order and make sure it is delivered to its destination (local and international) within the timeframe specified on the delivery policy.

Van Wyngaardt’s delivery policy

Our delivery policy requires a minimum order amount depending on the region. You may order from Monday to Thursday. Should you place an order before 12:00, we assure you of next-day delivery. If you order after 12:00, the order will be delivered to you the following working day. This is only valid for Gauteng stores. Outer Gauteng stores delivery period may vary. At Van Wyngaardt, we pride ourselves on always providing exceedingly good meats.
