Is your chef cooking and storing pork correctly?
Are you an entrepreneur who’s decided to open a new high-quality restaurant that is aimed at serving the best cuts of meat? Although it’s not a requirement to know the ideal temperatures at which different types of pork meat products should be cooked, it’s worth knowing so you can make sure your chef is preparing them correctly.
The recommended cooking temperatures of pork
Please note that all temperatures are in degrees Celsius (symbol: °C)
- Medium-rare: 63 °C to 66 °C
- Medium: 66 °C to 68 °C
- Medium-well: 68 °C to 71 °C
- Well-done: 71 °C
A cut of pork is considered to be lean meat and therefore shouldn’t be overcooked. For example, pre-cooked ham can be reheated to 60 °C. However, fresh ham should be cooked to 63 °C. It is best to confirm the meat is cooking at these temperatures by using a professional food thermometer.
Following the abovementioned cooking temperature guidelines will ensure that the pork is safe to eat, will be juicy and delicious.
