Although it’s not a requirement to know the ideal temperatures at which different types of pork meat products should be cooked, it’s worth knowing so you can make sure your chef is preparing them correctly.

The recommended cooking temperatures of pork

Please note that all temperatures are in degrees Celsius (symbol: °C)

  1.  Medium-rare: 63 °C to 66 °C
  2. Medium: 66 °C to 68 °C
  3. Medium-well: 68 °C to 71 °C
  4. Well-done: 71 °C

 A cut of pork is considered to be lean meat and therefore shouldn’t be overcooked. For example, pre-cooked ham can be reheated to 60 °C. However, fresh ham should be cooked to 63 °C. It is best to confirm the meat is cooking at these temperatures by using a professional food thermometer.

Following the abovementioned cooking temperature guidelines will ensure that the pork is safe to eat, will be juicy and delicious.

Correct storage timeline for pork products

In the refrigerator:

  1. Ham: Three to four days
  2. Bacon: Five to seven days
  3. Sausages: Seven days

Van Wyngaardt’s delivery policy

Van Wyngaardt meat supplier’s delivery policy requires a minimum order amount of R8,000.00. We are online to capture orders between Monday to Thursday. If you place your order before 12:00, we will deliver the next day; if it’s placed after 12:00, it will be delivered to you the following working day. Delivery is only available for the outer Gauteng region.
