Health inspection: What you need to know

Is your restaurant bustling with customers, and you’re serving vast quantities of high-quality quality pork meat products? That’s great, but please ensure that you are following South Africa’s health protocols so that when the inspector visits, you can show off your pristine A+ restaurant work environment.

The things a health inspector will check

  1. Essential items that will be checked
Essential items are that will be checked are anything directly related to foodborne illness. Please take note of the following examples.
    – Make sure all meat products are purchased from a reputable meat supplier.
    – Ensure cooked foods are rapidly chilled in the recommended amount of time. Your chef(s) and kitchen staff must know these time periods.
    – Confirm no cross-contamination between raw, cooked or ready to serve products has taken place during service and in storage.
    – Correct handwashing procedures. Make sure you wash your hands thoroughly with anti-bacterial soap and sanitise them as well. You can never be too careful.
  2. Unsafe foods
Health inspectors will check to ensure there are no potentially hazardous foods in your restaurant. Food such as pork (as well as other red meat and poultry) needs to be maintained at a specific temperature and can only be kept for a certain amount of time. If these requirements are not adhered to, you’re risking customers and staff suffering from food-related illnesses. So, cooking, holding and storage temperatures must be correct. They may also ask for proof that you’re following these best practices.
  3. The health of your employees
If any of your employees are sick, do not let them continue to handle and prepare food and send them home immediately. Person-to-person contact is a leading cause of foodborne illness, not to mention COVID-19. The last thing you want is for employees to transfer germs to customers – that could really damage your brand reputation. This should go without saying, but please follow all COVID-19 health protocols all the time. You don’t want to be forced to close, do you?
