Bacon Frittatas with Caramelized Onion


  • 200 g Van Wyngaardt Streaky Bacon finely chopped
  • 6 medium Eggs
  • 1 medium Onions chopped
  • 125 g Mushrooms sliced
  • 2 cups Grated Cheese
  • Pinch Salt
  • 125 ml Cream
  • 1 tsp fine chopped fresh Rosemary


  • 30 ml Oil
  • 2 medium Onions Sliced for caramelized topping
  • 60 ml brown/white vinegar
  • 2 tbsp Jam - any flavour at hand
  • 50 g Van Wyngaardt Streaky Bacon finely chopped


  • Make caramelized onion by mixing all together and fry until soft and brown
  • Mix all ingredients together for frittata, place in greased muffin pan and bake for 25 minutes at 180° C.
  • Fry streaky bacon until crispy.
  • Serve cold or hot by placing caramelized onion and bacon on top.
